What’s for Dinner

Hot dogs & corn on the cob for the kids, scrambled eggs & buttered toast for me

The kids were finishing their dinner when I got home from work so I went for my old stand-by: eggs and toast.

Even when your fridge is bare, you’re bound to have a carton of eggs, a stick of butter and a loaf of bread.

I melt a pat of butter, then crack the eggs straight into the skillet. I gently stir them over low heat until they’re soft and creamy, then plate ’em.

If I’d had cheese or chives, I would’ve added them. Tonight, I had my eggs straight up.
