I like to make something homemade on trick or trick night. There’s so much going on at home, so you can’t really go out. And getting pizza delivered just seems so lame. Plus my father-in-law is usually here and he, like Magnus, is a ‘good eater.’
This year, I didn’t go bananas — just a soup and assemble-yourself lunchmeat sandwiches.
This roasted broccoli and cauliflower soup was a nice departure from the usual cream of broccoli soup. Roasting the broccoli and cauliflower instead of just boiling it in chicken stock like most recipes gave it a completely different flavor — deep and roasty. I think they got a little charred though, so the soup was just this side of ruined. What really made it satisfying was…what else? Cheese. I used super-sharp white cheddar which stands up to the strong flavor of the roasted veg.
It was the perfect night for soup: cold and wet and inhospitable outside, cozy and safe inside.
